This Hill Country town is about to get a whole lot cheesier. Seguin-based sMAC’n Noodles, known for turning mac and cheese into a full-on meal, is opening its second location at 1515 N. Walnut Ave. near New Braunfels High School.

The new spot will give owner James Acosta and his team more space to stretch their creativity, literally. The larger kitchen means house-made pasta, sausage stuffing, and even smoked brisket will be on the menu.

Guests can stick with classic creamy mac or dive into bold mashups like the Buffalo Mac, loaded with chicken, bacon, ranch seasoning, and a buffalo drizzle. Another fan favorite, the “Tah-Ko” Mac, layers taco beef, chorizo, roasted corn, caramelized onions, and salsa. And if you’re feeling adventurous, don’t miss the rotating “Mac of the Month,” which has featured everything from Korean-inspired flavors to Mediterranean mashups.

The original Seguin location quickly became a favorite hangout thanks to its quirky vibe and community-driven spirit. Now, with a projected March 2026 opening, New Braunfels is about to find out just how fun and filling a bowl of mac and cheese can be.

2. Dos Gatos Kolache Bar

Kolache lovers, rejoice! A San Marcos favorite is finally making its way to New Braunfels. Dos Gatos Kolache Bar, the beloved bakery known for its mix of Czech tradition and Texas flair, is set to open this October at 1164 FM 306.

Dos Gatos has been a staple in San Marcos since 2009, winning over students, locals, and visitors alike with kolaches that go far beyond the ordinary. The menu balances sweet and savory, with options like peaches-and-cream for the dessert crowd and hearty hatch chile sausage pastries for those who prefer a little spice.

What started as the first business venture for founders Seth and Chase Katz has grown into a local institution with two San Marcos locations.

Now, New Braunfels residents will be able to get in on the daily ritual of grabbing a warm, pillowy kolache and a cup of coffee without the extra drive.

3. Texas Roadhouse

Big news for steak lovers: Texas Roadhouse is set to open its doors in New Braunfels this fall. The nationwide steakhouse chain, famous for its hand-cut steaks and irresistible dinner rolls with cinnamon butter, is planning a mid-November opening at 3206 I-35.

With more than 730 locations across the globe, Texas Roadhouse has built a reputation for hearty portions, casual family dining, and a lively atmosphere.

Alongside their signature steaks, the menu features ribs, burgers, sandwiches, and fresh salads, plus those warm rolls that many fans argue are reason enough to visit.

The New Braunfels location has been highly anticipated, and with its convenient Creekside location, it’s sure to draw crowds of both locals and travelers. Whether you’re celebrating a night out or just craving comfort food, this opening will add another big name to the city’s ever-expanding dining scene.

4. Old City Hall Restaurant & Bar

One of New Braunfels’ most iconic landmarks is getting a new life as an upscale dining destination. The former City Hall building at 200 N. Seguin Ave., which first opened in 1929 and has since housed everything from a police department to a WWII medic training site, is being transformed into Old City Hall Restaurant & Bar.

The project comes from the team behind McAdoo’s Seafood Company, another local favorite known for revitalizing historic spaces. This latest endeavor will pair the building’s nearly century-old character with modern touches, including a 4,000-square-foot addition that will house a bar, patio, private dining, and a new kitchen.

The menu is set to feature wood-fired steaks, house-made pastas, and a double-patty cheeseburger, along with a cocktail program boasting martinis, negronis, and frozen gin & tonics.

With an opening targeted for late 2025, Old City Hall is shaping up to be one of the most anticipated additions to the New Braunfels dining scene.

5. CAVA

A fresh taste of the Mediterranean is heading to New Braunfels. CAVA, the fast-casual chain known for its build-your-own bowls, pitas, and salads, is set to open at Town Center at Creekside in 2026.

The new 2,850-square-foot location is part of a major expansion for the Washington, D.C.–based brand, which has been rapidly growing across the country since going public in 2023. Construction on the New Braunfels spot is expected to begin in early 2026, with a projected summer opening.

CAVA has earned a reputation as a kind of “Mediterranean Chipotle,” praised for its fresh ingredients, bold flavors, and quick service. Guests can expect a wide range of customizable options, from lamb meatballs and harissa chicken to an array of toppings like hummus, pickled onions, and feta. The chain was even named the No. 1 “Best Healthy Chain” in America by Datassential, a food industry analyst.

Its arrival in Creekside adds another big name to the already-busy shopping hub, joining other highly anticipated openings like Texas Roadhouse. For locals craving something healthy, fast, and flavorful, CAVA is shaping up to be one of the most exciting new options in town.

6. Chipotle

Another national favorite is on the way to bring its second location to town. Chipotle Mexican Grill is set to open a brand-new location at 323 Creekside Crossing, bringing its famous burritos, bowls, and salads to one of New Braunfels’ busiest retail hubs.

The 2,528-square-foot restaurant will be built out in an endcap space, with construction scheduled to begin in May 2026 and wrap up by September 2026. While it may be a bit of a wait before doors open, locals can look forward to the same customizable, fresh, and fast meals Chipotle has become known for across the country.

With Creekside already buzzing with new dining options, this Chipotle location will give New Braunfels residents and visitors another quick and reliable go-to spot for lunch, dinner, or that mid-shopping hunger fix.

7. Bandidas Ice Cream

One of New Braunfels’ most colorful food trailers is getting a sweet new chapter. After years of serving up brisket, ribs, and late-night pit magic, Jewel Hill has officially closed her Bar B Que Bandidas trailer and is transforming it into an ice cream stand.

Hill says the change is as much about family as it is about business. After nearly a decade of weekend barbecue service, she wanted more time with her three daughters while still keeping her entrepreneurial spirit alive.

“When I chose to close BBQ I knew I had to do something with this cute little camper trailer,” she explained. “I think this is going to be really fun—don’t ya think?”

Fans of her barbecue don’t have to panic just yet as monthly cooks will still happen on a preorder basis. But now, the bright pink trailer that once turned out brisket by the pound will be serving up scoops of ice cream instead, giving locals a refreshing way to cool off in the Texas heat.

It’s a fitting next step for a business that always stood out with creativity and personality. From fusion barbecue dishes like coconut chicken ramen to now spinning into the dessert world, Hill’s story proves that Bandidas is all about reimagining what’s possible in a small trailer.
